  • 8 oz of vegetarian sausage, sliced
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 8 oz of penne pasta
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the vegetarian sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
  • Add the sliced bell peppers to the skillet and cook until they begin to soften, about 5 minutes.
  • Stir in the red pepper flakes, dried oregano, and dried basil. Season with salt and pepper to taste.
  • In the meantime, cook the penne pasta according to the package instructions. Drain and set aside.
  • Add the cooked vegetarian sausage back to the skillet and toss to combine with the peppers and onions.
  • Add the cooked penne pasta to the skillet and toss to combine with the sausage and peppers. Cook for an additional 2-3 minutes to heat through.
  • Sprinkle the grated Parmesan cheese over the pasta and toss to combine.
  • Garnish with fresh parsley and serve hot. Enjoy!
