Spicy Vegetarian Sausage and Pepper Pasta

Ingredients
- 8 oz of vegetarian sausage, sliced
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tsp red pepper flakes
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- 8 oz of penne pasta
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the vegetarian sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the sliced bell peppers to the skillet and cook until they begin to soften, about 5 minutes.
- Stir in the red pepper flakes, dried oregano, and dried basil. Season with salt and pepper to taste.
- In the meantime, cook the penne pasta according to the package instructions. Drain and set aside.
- Add the cooked vegetarian sausage back to the skillet and toss to combine with the peppers and onions.
- Add the cooked penne pasta to the skillet and toss to combine with the sausage and peppers. Cook for an additional 2-3 minutes to heat through.
- Sprinkle the grated Parmesan cheese over the pasta and toss to combine.
- Garnish with fresh parsley and serve hot. Enjoy!
