Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the spicy Italian sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 8-10 minutes.
  • Remove the cooked sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced bell peppers, onion, and garlic until they are softened, about 5 minutes.
  • Stir in the red pepper flakes and season with salt and pepper to taste.
  • Add the zucchini noodles and chicken broth to the skillet, and cook for 2-3 minutes, tossing gently, until the zucchini noodles are just tender.
  • Return the cooked sausage to the skillet and toss everything together until well combined and heated through.
