Spicy Sausage and Pepper Pasta

Ingredients
- 8 oz of spicy Italian sausage, casings removed
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1/2 teaspoon of red pepper flakes
- 1/2 cup of chicken broth
- 1/2 cup of heavy cream
- 8 oz of penne pasta
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil and cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers, onion, and garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the red pepper flakes and chicken broth to the skillet. Bring to a simmer and cook for 2-3 minutes.
- Stir in the heavy cream and cooked sausage. Season with salt and pepper to taste. Simmer for an additional 2-3 minutes.
- Add the cooked penne pasta to the skillet and toss to coat with the sausage and pepper mixture.
- Sprinkle with grated Parmesan cheese and serve hot.
