- 1 lb spicy Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup dried green lentils
- 6 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot or Dutch oven, cook the spicy Italian sausage over medium heat, breaking it up into crumbles with a spoon, until browned and cooked through, about 8-10 minutes.
- Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Stir in the dried green lentils, chicken or vegetable broth, diced tomatoes, dried thyme, paprika, and cayenne pepper. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for 45-50 minutes, or until the lentils are tender.
