Ingredients
- 8 oz firm tofu, drained and cubed
- 8 oz rice noodles
- 1/4 cup soy sauce
- 2 tbsp peanut butter
- 1 tbsp sriracha sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 4 green onions, chopped
- 1/4 cup chopped peanuts
- 2 tbsp chopped cilantro
- 1 lime, cut into wedges
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp peanut butter, 1 tbsp sriracha sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp brown sugar, minced garlic, and grated ginger to make the peanut sauce. Set aside.
- Heat a non-stick skillet over medium-high heat. Add the cubed tofu and cook until golden and crispy, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced red bell pepper and shredded carrots. Cook for 2-3 minutes until slightly softened.
- Add the cooked rice noodles to the skillet with the vegetables. Pour the peanut sauce over the noodles and vegetables. Toss to combine and heat through for 2-3 minutes.
- Divide the noodle mixture into bowls. Top with the crispy tofu, chopped green onions, chopped peanuts, and cilantro. Serve with lime wedges for squeezing over the bowl before eating.
