  • 1/2 cup brown sugar
  • 1/2 tsp red pepper flakes
  • 1 head cauliflower, riced
  • 2 green onions, sliced for garnish

Instructions

  • In a large bowl, toss the thinly sliced flank steak with 1/4 cup of cornstarch until evenly coated.
  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over high heat. Add the coated flank steak and cook until browned and crispy, about 3-4 minutes. Remove the steak from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and cook for 1-2 minutes until fragrant.
  • Add the low-sodium soy sauce, water, brown sugar, and red pepper flakes to the skillet. Stir to combine and bring to a simmer.
  • Return the cooked flank steak to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until the sauce has thickened and the steak is heated through.
  • While the beef is cooking, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they resemble rice grains. Alternatively, you can use pre-made cauliflower rice.
  • In a separate skillet, heat the cauliflower rice over medium heat for 5-7 minutes until heated through.
  • To serve, divide the cauliflower rice among serving plates and top with the spicy Mongolian beef. Garnish with sliced green onions and serve hot.
