Ingredients
- 1 lb boneless, skinless chicken breasts, cut into strips
- 2 ripe mangoes, peeled and diced
- 1 red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 8 small flour tortillas
- 1/4 cup sour cream (optional, for serving)
- 1/4 cup shredded lettuce (optional, for serving)
Instructions
- In a large bowl, combine the chicken strips, diced mangoes, chopped red onion, minced jalapeno pepper, and chopped cilantro.
- In a small bowl, mix together the lime juice, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Pour this mixture over the chicken and mango mixture, and toss to coat evenly. Let marinate for 10 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken and mango mixture to the skillet and cook for 6-8 minutes, or until the chicken is cooked through and the mango is slightly caramelized.
- Warm the flour tortillas in a separate skillet or in the microwave.
- To assemble the tacos, place a spoonful of the chicken and mango mixture onto each tortilla. Top with a dollop of sour cream and a sprinkle of shredded lettuce, if desired.
- Serve immediately and enjoy!
