Ingredients
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery ribs, chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 3 cups chicken broth
- 1 cup long grain white rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the sliced andouille sausage and cook until browned, then remove from the pot and set aside.
- In the same pot, add the diced chicken breast and cook until browned, then remove from the pot and set aside.
- Add the chopped onion, bell pepper, and celery to the pot and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes.
- Add the diced tomatoes (with their juices), chicken broth, rice, Cajun seasoning, thyme, oregano, and cayenne pepper to the pot. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the cooked andouille sausage and chicken, and cook for an additional 5-10 minutes to heat through.
- Garnish with chopped green onions before serving.
