Ingredients
- 2 tablespoons of vegetable oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 jalapeno pepper, finely chopped
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup of cauliflower florets
- 1 can of chickpeas, drained and rinsed
- 1 cup of coconut milk
- 1 cup of vegetable broth
- 2 tablespoons of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of ground turmeric
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the diced onion, minced garlic, and chopped jalapeno pepper. Cook for 3-4 minutes until the onions are translucent and the mixture is fragrant.
- Stir in the diced red bell pepper, zucchini, and cauliflower florets. Cook for another 5 minutes, stirring occasionally.
- Add the drained and rinsed chickpeas to the pot, along with the coconut milk and vegetable broth. Stir in the curry powder, ground cumin, ground turmeric, and cayenne pepper. Season with salt and pepper to taste.
- Bring the curry to a simmer, then reduce the heat to low and let it cook for 20-25 minutes, or until the vegetables are tender and the flavors have melded together.
- Taste and adjust the seasoning if needed. Serve the spicy jalapeno vegetable and chickpea curry over steamed rice, garnished with fresh cilantro.
