  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1/4 cup brown sugar
  • 12 slices bacon

  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1/4 cup brown sugar
  • 12 slices bacon

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 2 lbs of ground beef, 1 cup breadcrumbs, 1/2 cup milk, 2 eggs, 1/2 cup diced onion, diced jalapenos, minced garlic, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp cayenne pepper, and 1/2 tsp paprika. Mix until well combined.
  • In a small bowl, mix together 1/2 cup ketchup, 1 tbsp Worcestershire sauce, and 1/4 cup brown sugar. Set aside.
  • Line a baking sheet with aluminum foil and place a wire rack on top. This will allow the bacon to crisp up on all sides.
  • Form the meat mixture into a loaf shape on the wire rack.
  • Brush the ketchup mixture over the top and sides of the meatloaf.
  • Lay the bacon slices over the top of the meatloaf, tucking the ends underneath.
  • Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the bacon is crispy.
  • Remove from the oven and let it rest for 10 minutes before slicing and serving.
