  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for 10 minutes until they start to soften.
  • Sprinkle the sugar over the onions and continue to cook, stirring occasionally, for another 15-20 minutes until the onions are golden brown and caramelized. Season with salt and black pepper. Set aside.
  • In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the spicy Italian sausages and cook for 12-15 minutes, turning occasionally, until they are browned and cooked through.
  • While the sausages are cooking, preheat the broiler. Open the hoagie rolls and place them on a baking sheet. Place a slice of provolone cheese on one side of each roll. Place under the broiler for 1-2 minutes until the cheese is melted and bubbly.
  • To assemble the sandwiches, spread a tablespoon of marinara sauce on the other side of each hoagie roll. Place a cooked sausage on top of the marinara sauce, then top with a generous amount of caramelized onions. Serve hot and enjoy!
