Instructions

  • In a small bowl, whisk together 1/4 cup gochujang, 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 2 tablespoons honey, 2 cloves minced garlic, 1 tablespoon grated ginger, and 1 tablespoon sesame oil to make the marinade.
  • Cut the pressed tofu into cubes and place them in a shallow dish. Pour the marinade over the tofu, making sure it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated tofu and cook for 5-7 minutes, stirring occasionally, until the tofu is browned and crispy on the outside. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the sliced red and yellow bell peppers, onion, and broccoli. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  • Return the tofu to the skillet and toss everything together to combine. Cook for an additional 2-3 minutes to heat the tofu through.
  • Serve the spicy gochujang marinated tofu stir-fry over cooked rice, and garnish with sesame seeds and sliced green onions. Enjoy!
