  • Add the chopped carrots to the pot and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  • Return the pureed soup to the pot and stir in the coconut milk and cayenne pepper. Season with salt and pepper to taste.
  • Simmer the soup for an additional 5 minutes to allow the flavors to meld together.
