Ingredients
- 8 large eggs
- 1 ripe avocado, sliced
- 8 oz lump crabmeat
- 1/4 cup mayonnaise
- 1 tbsp hot sauce
- 1 tsp Old Bay seasoning
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a medium bowl, mix together the lump crabmeat, mayonnaise, hot sauce, Old Bay seasoning, and chopped parsley. Set aside.
- Bring a large pot of water to a boil. Carefully add the eggs and cook for 6 minutes for soft-boiled eggs. Remove the eggs with a slotted spoon and place them in a bowl of ice water to stop the cooking process. Once cooled, carefully peel the eggs and set aside.
- To assemble, place a few slices of avocado on each plate. Cut the soft-boiled eggs in half and place them on top of the avocado. Spoon the spicy crab mixture over the eggs and avocado. Season with salt and pepper to taste.
