Ingredients
- 8 large eggs
- 1 ripe avocado, sliced
- 1/2 lb lump crabmeat
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp hot sauce
- 1/2 tsp Old Bay seasoning
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- In a medium bowl, mix together 1/4 cup mayonnaise, 1 tbsp Dijon mustard, 1 tsp hot sauce, 1/2 tsp Old Bay seasoning, and 1/4 cup chopped fresh parsley. Gently fold in 1/2 lb lump crabmeat and set aside.
- In a large non-stick skillet, melt 2 tbsp butter over medium heat. Crack 8 large eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
- To assemble, place a few slices of ripe avocado on each plate. Top with a generous spoonful of the spicy crab mixture, then place 2 cooked eggs on top. Garnish with additional chopped parsley and a drizzle of hot sauce if desired.
