Spicy Chipotle Tofu Tacos

Ingredients
- 1 block of extra firm tofu, drained and pressed
- 2 tablespoons of olive oil
- 2 chipotle peppers in adobo sauce, minced
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 small corn tortillas
- 1 cup of shredded lettuce
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped cilantro
- 1/4 cup of diced red onion
- 1 avocado, sliced
- Lime wedges, for serving
Instructions
- Cut the pressed tofu into small cubes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the tofu cubes to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and crispy.
- In a small bowl, mix together the minced chipotle peppers, minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper.
- Add the remaining 1 tablespoon of olive oil to the skillet with the tofu, then add the chipotle mixture. Stir to coat the tofu evenly and cook for an additional 2-3 minutes.
- Warm the corn tortillas in a separate skillet or in the microwave.
- To assemble the tacos, divide the spicy chipotle tofu among the tortillas. Top with shredded lettuce, diced tomatoes, chopped cilantro, diced red onion, and sliced avocado.
- Serve the tacos with lime wedges for squeezing over the top.
