  • 1 block of extra firm tofu, drained and pressed
  • 2 tablespoons of olive oil
  • 2 chipotle peppers in adobo sauce, minced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 8 small corn tortillas
  • 1 cup of shredded lettuce
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1/4 cup of diced red onion
  • 1 avocado, sliced
  • Lime wedges, for serving

  • 1/4 teaspoon of black pepper

  • 1 cup of shredded lettuce
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1/4 cup of diced red onion
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions

  • Cut the pressed tofu into small cubes.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the tofu cubes to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and crispy.
  • In a small bowl, mix together the minced chipotle peppers, minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper.
  • Add the remaining 1 tablespoon of olive oil to the skillet with the tofu, then add the chipotle mixture. Stir to coat the tofu evenly and cook for an additional 2-3 minutes.
  • Warm the corn tortillas in a separate skillet or in the microwave.
  • To assemble the tacos, divide the spicy chipotle tofu among the tortillas. Top with shredded lettuce, diced tomatoes, chopped cilantro, diced red onion, and sliced avocado.
  • Serve the tacos with lime wedges for squeezing over the top.
