Instructions

  • In a large bowl, combine the minced chipotle peppers, minced garlic, cumin, paprika, salt, black pepper, lime zest, lime juice, and olive oil.
  • Add the chicken drumsticks to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
  • Preheat the grill to medium-high heat. Remove the drumsticks from the marinade and grill for 20-25 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
  • In a small saucepan, combine the honey and soy sauce. Cook over medium heat, stirring constantly, until the glaze is smooth and slightly thickened, about 3-4 minutes.
  • Brush the honey glaze over the grilled drumsticks during the last 5 minutes of cooking, allowing the glaze to caramelize and create a sticky coating on the chicken.
