Ingredients
- 3 lbs of pork ribs
- 1 cup of BBQ sauce
- 2 chipotle peppers in adobo sauce, minced
- 1/4 cup of honey
- 1/4 cup of pineapple juice
- 1 teaspoon of smoked paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 cups of diced pineapple
- 1/2 cup of diced red onion
- 1/4 cup of chopped cilantro
- 1 jalapeno, seeded and diced
- Juice of 1 lime
Instructions
- Preheat your smoker to 225°F.
- Season the ribs with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Place the ribs in the smoker and cook for 2.5 hours, or until the meat starts to pull away from the bones.
- In a small saucepan, combine the BBQ sauce, minced chipotle peppers, honey, pineapple juice, and cayenne pepper. Simmer for 10 minutes, then remove from heat.
- Brush the glaze over the smoked ribs and continue to cook for another 30 minutes, basting with the glaze every 10 minutes.
- While the ribs are cooking, prepare the pineapple salsa by combining the diced pineapple, red onion, cilantro, jalapeno, and lime juice in a bowl. Season with salt to taste.
- Once the ribs are done, remove them from the smoker and let them rest for 10 minutes before slicing.
- Serve the ribs with a generous spoonful of pineapple salsa on top.
