  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • 8 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 325°F.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  • Add the ketchup, apple cider vinegar, brown sugar, chipotle peppers, adobo sauce, Worcestershire sauce, smoked paprika, cumin, salt, and black pepper to the skillet. Stir to combine and simmer for 5 minutes. Remove from heat and let the sauce cool slightly.
  • Place the beef brisket in a roasting pan and pour the chipotle glaze over the top, spreading it evenly. Add 1/4 cup of water to the bottom of the pan. Cover the pan with foil and roast in the preheated oven for 5-6 hours, or until the brisket is tender and easily shreds with a fork.
  • While the brisket is cooking, prepare the creamy coleslaw. In a large bowl, combine the shredded cabbage and carrots.
