  • 1/2 cup mayonnaise

  • 4 slices pepper jack cheese
  • 1 cup shredded lettuce

  • 1 cup shredded lettuce
  • 1 tomato, sliced

Instructions

  • Preheat the grill or a grill pan over medium-high heat.
  • In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of smoked paprika.
  • Brush the chicken breasts with the spice mixture and grill for 6-7 minutes on each side, or until fully cooked.
  • While the chicken is grilling, mix the mayonnaise and minced chipotle peppers in a small bowl. Set aside.
  • When the chicken is cooked, place a slice of pepper jack cheese on each chicken breast and allow it to melt for 1-2 minutes.
  • Toast the sandwich buns on the grill for 1-2 minutes.
  • Spread the chipotle mayonnaise on the bottom half of each bun.
  • Place a grilled chicken breast on each bun, followed by shredded lettuce and tomato slices.
