Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 4 sandwich buns
- 1/2 cup mayonnaise
- 2 chipotle peppers in adobo sauce, minced
- 4 slices pepper jack cheese
- 1 cup shredded lettuce
- 1 tomato, sliced
Instructions
- Preheat the grill or a grill pan over medium-high heat.
- In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of smoked paprika.
- Brush the chicken breasts with the spice mixture and grill for 6-7 minutes on each side, or until fully cooked.
- While the chicken is grilling, mix the mayonnaise and minced chipotle peppers in a small bowl. Set aside.
- When the chicken is cooked, place a slice of pepper jack cheese on each chicken breast and allow it to melt for 1-2 minutes.
- Toast the sandwich buns on the grill for 1-2 minutes.
- Spread the chipotle mayonnaise on the bottom half of each bun.
- Place a grilled chicken breast on each bun, followed by shredded lettuce and tomato slices.
- Top with the other half of the bun and serve hot.
