  • In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
  • Add the chopped onion and minced garlic to the skillet with the chicken. Cook for an additional 2-3 minutes until the onion is softened.
  • Stir in the minced chipotle pepper, ground cumin, smoked paprika, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
  • Pour in the tomato sauce and chopped cilantro, stirring to combine. Simmer for 5 minutes until the chicken is cooked through and the sauce has thickened. Remove from heat and let the filling cool slightly.
  • On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thickness. Using a round cutter or a small plate, cut out circles of dough, about 4-5 inches in diameter.
