Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of chipotle BBQ sauce
- 1 cup of shredded pepper jack cheese
- 1/2 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- 8 slices of bacon
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil and place a wire rack on top.
- Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
- In a small bowl, mix together the chipotle BBQ sauce, shredded pepper jack cheese, diced red onion, and chopped cilantro.
