Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup quinoa
- 2 cups chicken broth
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons chili powder
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lime, juiced
- 2 green onions, chopped
Instructions
- In a small bowl, mix together the soy sauce, honey, chili powder, cayenne pepper, garlic powder, salt, and black pepper to make the spicy glaze.
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with the spicy glaze and place them on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- While the chicken is grilling, rinse the quinoa under cold water. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
- In a small bowl, whisk together the olive oil and lime juice. Toss the cooked quinoa with the olive oil and lime mixture, and stir in the chopped green onions.
