Spicy Chicken Tacos

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into small strips
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/2 cup chicken broth
- Salt and pepper to taste
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
- Add the chicken strips to the skillet and cook for 5-6 minutes, or until they are no longer pink in the center. Remove the chicken from the skillet and set aside.
- In the same skillet, heat the remaining 1 tbsp of olive oil over medium heat. Add the diced onion and cook for 2-3 minutes, or until it becomes translucent. Add the minced garlic and cook for an additional 1 minute.
- Stir in the chili powder, cumin, paprika, and cayenne pepper, and cook for 1 minute to toast the spices.
- Pour in the chicken broth and bring the mixture to a simmer. Add the cooked chicken back to the skillet and simmer for 2-3 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
- Warm the flour tortillas in a dry skillet over medium heat for 30 seconds on each side.
- To assemble the tacos, divide the chicken mixture evenly among the tortillas. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, and chopped cilantro.
- Serve immediately and enjoy!
