Ingredients
- 12 oz of linguine pasta
- 1 lb of large shrimp, peeled and deveined
- 2 tbsp of Cajun seasoning
- 2 tbsp of olive oil
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 1/2 cup of chicken broth
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook the linguine pasta according to the package instructions. Drain and set aside.
- In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes until slightly thickened.
- Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add the cooked linguine pasta and cooked shrimp to the skillet, tossing to coat everything in the creamy Cajun sauce.
