  • 2 boneless, skinless chicken breasts, cut into strips
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a bowl, toss the chicken strips with 2 tablespoons of Cajun seasoning until evenly coated.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken strips and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sliced red and green bell peppers, and onion. Sauté for 3-4 minutes until the vegetables are tender.
  • Add the minced garlic to the skillet and cook for an additional 1 minute.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
  • Stir in the cooked penne pasta and grated Parmesan cheese. Cook for 2-3 minutes, allowing the sauce to thicken.
  • Season with salt and pepper to taste. Add the cooked Cajun chicken back to the skillet and toss to combine with the pasta and sauce.
  • Garnish with fresh parsley and serve hot. Enjoy!
