Ingredients
- 4 goat feet, cleaned and trimmed
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 scotch bonnet pepper, chopped
- 1 teaspoon thyme
- 1 teaspoon allspice
- 1 cup chicken broth
- 1 cup mango puree
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the chopped onion, minced garlic, grated ginger, and chopped scotch bonnet pepper. Sauté for 2-3 minutes until fragrant.
- Add the goat feet to the pot and brown on all sides, about 5 minutes.
- Stir in the thyme and allspice, then pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours or until the goat feet are tender.
- In a separate saucepan, combine the mango puree, brown sugar, and soy sauce. Simmer over medium heat for 10-15 minutes until the glaze thickens slightly.
- Once the goat feet are tender, remove them from the pot and place them on a baking sheet. Brush the mango glaze over the goat feet, then broil in the oven for 5-7 minutes until the glaze caramelizes.
