Instructions

  • In a large pot, heat the vegetable oil over medium-high heat.
  • Add the chopped onion, minced garlic, grated ginger, and chopped scotch bonnet pepper. Sauté for 2-3 minutes until fragrant.
  • Add the goat feet to the pot and brown on all sides, about 5 minutes.
  • Stir in the thyme and allspice, then pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours or until the goat feet are tender.
  • In a separate saucepan, combine the mango puree, brown sugar, and soy sauce. Simmer over medium heat for 10-15 minutes until the glaze thickens slightly.
