  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas

Instructions

  • In a medium bowl, mash the black beans with a fork or potato masher.
  • Stir in the diced red bell pepper, red onion, jalapeno, ground cumin, chili powder, cayenne pepper, and chopped cilantro.
  • Lay out the flour tortillas and divide the black bean mixture evenly over half of each tortilla.
  • Sprinkle the shredded Monterey Jack cheese over the black bean mixture, then fold the tortillas in half to cover the filling.
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  • Place 2 quesadillas in the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  • Repeat with the remaining quesadillas, adding more oil to the skillet as needed.
  • Remove from the skillet and let cool for a minute before slicing into wedges.
  • Serve with salsa, sour cream, or guacamole if desired.
