Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1 jalapeno, seeded and diced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 2 tbsp vegetable oil
Instructions
- In a medium bowl, mash the black beans with a fork or potato masher.
- Stir in the diced red bell pepper, red onion, jalapeno, ground cumin, chili powder, cayenne pepper, and chopped cilantro.
- Lay out the flour tortillas and divide the black bean mixture evenly over half of each tortilla.
- Sprinkle the shredded Monterey Jack cheese over the black bean mixture, then fold the tortillas in half to cover the filling.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Place 2 quesadillas in the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- Repeat with the remaining quesadillas, adding more oil to the skillet as needed.
- Remove from the skillet and let cool for a minute before slicing into wedges.
- Serve with salsa, sour cream, or guacamole if desired.
