Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
  • In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 2 minced garlic cloves over medium heat until the beef is no longer pink. Drain any excess fat.
  • Stir in 1 can of red enchilada sauce, 1 can of chopped green chilies, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Simmer for 5 minutes.
  • Wrap 12 corn tortillas in a damp paper towel and microwave for 1 minute to soften.
  • Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Sprinkle with 1/4 cup of shredded cheddar cheese. Roll up and place seam side down in the prepared baking dish.
  • Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining shredded cheddar cheese.
  • Bake for 20 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped fresh cilantro before serving.
