Spicy Beef Enchiladas

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10 ounces) red enchilada sauce
- 1 can (4 ounces) chopped green chilies
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef, 1 chopped onion, and 2 minced garlic cloves over medium heat until the beef is no longer pink. Drain any excess fat.
- Stir in 1 can of red enchilada sauce, 1 can of chopped green chilies, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Simmer for 5 minutes.
- Wrap 12 corn tortillas in a damp paper towel and microwave for 1 minute to soften.
- Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Sprinkle with 1/4 cup of shredded cheddar cheese. Roll up and place seam side down in the prepared baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining shredded cheddar cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before serving.
