Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup frozen corn
- 1 cup frozen peas
- 1 can (14 oz) diced tomatoes
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook 1 pound of ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for 5 minutes, until the vegetables are softened.
- Stir in the frozen corn, frozen peas, diced tomatoes, white rice, beef broth, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Transfer the beef and vegetable mixture to a greased 9x13 inch baking dish. Cover with foil and bake for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese over the casserole, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool for 5 minutes before serving. Enjoy!
