Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the sliced potatoes and onions to the skillet and cook until they are tender, about 10 minutes. Stir occasionally to prevent sticking.
  • In a large bowl, beat the eggs and season with salt and pepper.
  • Once the potatoes and onions are tender, remove them from the skillet and drain any excess oil.
  • Add the potatoes and onions to the bowl with the beaten eggs and mix well to combine.
  • In the same skillet, heat a tablespoon of olive oil over medium heat.
  • Pour the potato and egg mixture into the skillet and spread it out evenly.
  • Cook for about 5-7 minutes, or until the edges start to set and the bottom is golden brown.
  • Place a large plate over the skillet and carefully flip the tortilla onto the plate.
  • Add another tablespoon of olive oil to the skillet and slide the tortilla back into the skillet to cook the other side for another 5-7 minutes, or until it is cooked through and golden brown.
  • Once the tortilla is cooked, remove it from the skillet and let it cool for a few minutes before slicing and serving. Enjoy!
