Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the sliced chorizo and cook for 2-3 minutes until it starts to release its oils and becomes slightly crispy. Remove the chorizo from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of olive oil and minced garlic. Cook for 1-2 minutes until the garlic becomes fragrant, being careful not to burn it.
  • Add the red pepper flakes and shrimp to the skillet. Cook for 2-3 minutes, stirring occasionally, until the shrimp turns pink and opaque.
  • Pour in the white wine and bring to a simmer. Cook for an additional 2-3 minutes to allow the alcohol to evaporate and the flavors to meld.
  • Return the cooked chorizo to the skillet and toss to combine with the shrimp and garlic. Season with salt and pepper to taste.
  • Sprinkle the chopped parsley over the shrimp and chorizo mixture, and stir to incorporate.
  • Remove the skillet from the heat and transfer the Spanish garlic shrimp and chorizo to a serving dish.
  • Serve immediately as an appetizer or as a main course with crusty bread or over rice.
