Spanish Garlic Shrimp, or Gambas al Ajillo, is a classic Spanish tapas dish known for its bold flavors and simplicity. Originating from the southern regions of Spain, this dish features succulent shrimp sautéed in olive oil, garlic, and red pepper flakes, creating a tantalizing aroma and rich taste. Renowned chefs like José Andrés have popularized this dish in the United States, while traditional Spanish restaurants in regions like Andalusia and Catalonia continue to serve authentic versions. The key to perfecting this dish lies in using fresh, high-quality shrimp and allowing the garlic to infuse the oil, creating a robust base for the seafood. For a unique twist, some chefs add a splash of sherry or white wine for added depth of flavor. When in Spain, seeking out a local tapas bar for Gambas al Ajillo is a must for any food enthusiast.
