Ingredients
- 1 cup of polenta
- 4 cups of water
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1/2 pound of Spanish chorizo, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can (14.5 oz) of diced tomatoes
- 1 teaspoon of paprika
- 1/2 teaspoon of dried oregano
- 1/4 cup of chopped fresh parsley
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of polenta, reduce heat to low, and cook for 15-20 minutes, stirring occasionally, until thickened. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Keep warm.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1/2 pound of sliced Spanish chorizo and cook for 3-4 minutes until browned. Remove chorizo from the skillet and set aside.
- In the same skillet, add 1 diced onion and cook for 3-4 minutes until softened. Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Stir in 1 diced red bell pepper and cook for 2-3 minutes until slightly softened.
- Add 1 can of diced tomatoes, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano. Bring to a simmer and cook for 5-7 minutes, stirring occasionally.
- Return the cooked chorizo to the skillet and stir to combine with the tomato mixture.
- To serve, spoon the creamy polenta onto plates and top with the Spanish chorizo and tomato mixture. Garnish with 1/4 cup of chopped fresh parsley. Enjoy!
