Ingredients
- 1 tablespoon olive oil
- 1 pound Spanish chorizo, sliced
- 1 onion, sliced
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add 1 pound of sliced Spanish chorizo to the skillet and cook for 5 minutes, stirring occasionally.
- Add 1 sliced onion to the skillet and cook for an additional 3 minutes.
- Stir in 2 sliced bell peppers and cook for 5 minutes, or until the vegetables are tender-crisp.
- Add 3 cloves of minced garlic, 1 teaspoon of smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Cook for 2 minutes, stirring constantly.
- Remove the skillet from the heat and sprinkle with 1/4 cup of chopped fresh parsley.
- Serve the Spanish chorizo and peppers hot, as a main course or with crusty bread.
