  • In a small bowl, mix 1/4 cup of granulated sugar and 1 teaspoon of cornstarch. Gradually add this mixture to the saucepan, whisking constantly until the hot chocolate thickens slightly, about 5 minutes.
  • Stir in 1/2 teaspoon of vanilla extract and 1/4 teaspoon of ground cinnamon, and continue to heat for an additional 2-3 minutes.
  • Remove from heat and let the hot chocolate cool for a few minutes before serving.
  • Pour the Spanish Chocolate Caliente into mugs, and optionally top with whipped cream or a sprinkle of cocoa powder. Enjoy!
