Spanish Chocolate Caliente

Ingredients
- 4 cups of whole milk
- 8 ounces of dark chocolate, chopped
- 1/4 cup of granulated sugar
- 1 teaspoon of cornstarch
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of ground cinnamon
Instructions
- In a saucepan, heat 4 cups of whole milk over medium heat until it begins to steam, but not boil.
- Add 8 ounces of chopped dark chocolate to the saucepan and whisk until completely melted and smooth.
- In a small bowl, mix 1/4 cup of granulated sugar and 1 teaspoon of cornstarch. Gradually add this mixture to the saucepan, whisking constantly until the hot chocolate thickens slightly, about 5 minutes.
- Stir in 1/2 teaspoon of vanilla extract and 1/4 teaspoon of ground cinnamon, and continue to heat for an additional 2-3 minutes.
- Remove from heat and let the hot chocolate cool for a few minutes before serving.
- Pour the Spanish Chocolate Caliente into mugs, and optionally top with whipped cream or a sprinkle of cocoa powder. Enjoy!
