Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves, cut side down, on a baking sheet. Bake for 30-40 minutes, or until the flesh is tender and easily pierced with a fork. Remove from the oven and let cool for 10 minutes.
  • While the squash is baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  • Stir in the crushed tomatoes, dried oregano, dried basil, salt, and pepper. Simmer the marinara sauce for 15-20 minutes, stirring occasionally, until it thickens slightly.
  • Using a fork, scrape the flesh of the spaghetti squash to create 'noodles'. Divide the squash noodles among serving plates and top with the marinara sauce. Garnish with fresh basil leaves and serve with grated Parmesan cheese.
