  • 1 lb of boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb of boneless pork loin, cut into 1-inch cubes
  • 1/4 cup of olive oil
  • 1/4 cup of lemon juice
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 4 pita bread rounds
  • 1 cup of diced tomatoes
  • 1 cup of diced cucumbers
  • 1/2 cup of diced red onion
  • 1/4 cup of chopped fresh parsley
  • 1 cup of tzatziki sauce

Instructions

  • In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
  • Add the chicken and pork cubes to the bowl and toss to coat the meat in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat a grill or grill pan over medium-high heat. Thread the marinated meat onto skewers, alternating between chicken and pork cubes.
  • Grill the skewers for 10-12 minutes, turning occasionally, until the meat is cooked through and has a nice charred exterior.
  • While the meat is grilling, warm the pita bread rounds on the grill for 1-2 minutes per side.
  • In a small bowl, combine the diced tomatoes, cucumbers, red onion, and chopped parsley to make a fresh salad.
  • To assemble the souvlaki plates, place a warm pita bread round on each plate. Slide the grilled meat off the skewers onto the pita bread. Serve with the fresh salad and a dollop of tzatziki sauce.
