Souvlaki Plate

Ingredients
- 1 lb of boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 lb of boneless pork loin, cut into 1-inch cubes
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- 4 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 pita bread rounds
- 1 cup of diced tomatoes
- 1 cup of diced cucumbers
- 1/2 cup of diced red onion
- 1/4 cup of chopped fresh parsley
- 1 cup of tzatziki sauce
Instructions
- In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
- Add the chicken and pork cubes to the bowl and toss to coat the meat in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated meat onto skewers, alternating between chicken and pork cubes.
- Grill the skewers for 10-12 minutes, turning occasionally, until the meat is cooked through and has a nice charred exterior.
- While the meat is grilling, warm the pita bread rounds on the grill for 1-2 minutes per side.
- In a small bowl, combine the diced tomatoes, cucumbers, red onion, and chopped parsley to make a fresh salad.
- To assemble the souvlaki plates, place a warm pita bread round on each plate. Slide the grilled meat off the skewers onto the pita bread. Serve with the fresh salad and a dollop of tzatziki sauce.
