  • 1 block of extra firm tofu, pressed and cut into cubes

  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • Lime wedges for serving
  • Sliced jalapenos for garnish (optional)

Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of paprika, and salt and pepper to taste.
