Instructions

  • In a large pot, heat 3 tablespoons of cooking oil over medium heat.
  • Add the beef cubes and cook until browned on all sides.
  • Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  • Add the diced tomatoes, potatoes, lemongrass, kaffir lime leaves, and bay leaves to the pot. Simmer for another 20 minutes or until the beef and potatoes are tender.
  • Stir in the coconut milk and season with salt and pepper to taste. Simmer for an additional 10 minutes.
  • Remove the lemongrass stalks and bay leaves from the soup.
  • Ladle the Soto Betawi into serving bowls and garnish with fried shallots.
  • Serve hot with lime wedges on the side. Enjoy!
