Ingredients
- 2 cups masa harina
- 1 1/2 cups warm water
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup refried beans
- 1 cup shredded cooked chicken
- 1 cup shredded lettuce
- 1/2 cup crumbled queso fresco
- 1/2 cup salsa
- 1 avocado, sliced
Instructions
- In a large bowl, mix 2 cups of masa harina with 1 1/2 cups of warm water and 1/2 teaspoon of salt to form a soft dough.
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Flatten each ball into a thick tortilla, about 1/4 inch thick.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
- Cook the tortillas in the hot oil until golden brown and cooked through, about 3 minutes per side. Drain on paper towels.
- Spread 2 tablespoons of refried beans on each sope, then top with shredded chicken, lettuce, queso fresco, salsa, and avocado slices.
- Serve immediately and enjoy!
