Ingredients
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 4 tablespoons unsalted butter, melted
- Vegetable oil
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- Pretzel salt or coarse sea salt
Instructions
- In a large mixing bowl, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes, until it begins to foam.
- Add the flour and melted butter to the yeast mixture and mix until well combined. Knead the dough for about 5 minutes, until it is smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, until it doubles in size.
- Preheat the oven to 450°F (230°C) and line two baking sheets with parchment paper. Brush the parchment paper with vegetable oil.
- In a large pot, bring 10 cups of water and 2/3 cup baking soda to a rolling boil.
- Divide the dough into 8 equal pieces. Roll each piece into a long rope, then cut the rope into 1-inch pieces to make the pretzel bites.
- Carefully add the pretzel bites to the boiling water in batches, cooking for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.
- Brush the pretzel bites with the egg wash and sprinkle with pretzel salt or coarse sea salt.
