Honey Mustard Smoked Turkey

Ingredients
- 1 (12-14 pound) whole turkey, thawed if frozen
- 1 cup Dijon mustard
- 1/2 cup honey
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- In a small bowl, whisk together 1 cup of Dijon mustard, 1/2 cup of honey, 1/4 cup of apple cider vinegar, 2 tablespoons of olive oil, 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of smoked paprika to make the honey mustard marinade.
- Place the whole turkey in a large resealable plastic bag or a shallow dish. Pour the honey mustard marinade over the turkey, making sure it is evenly coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight, turning the turkey occasionally to marinate evenly.
- Prepare your smoker for cooking, bringing the temperature to 225-250 degrees F (110-120 degrees C). Add your choice of wood chips for smoking.
- Remove the turkey from the marinade and discard any excess marinade. Pat the turkey dry with paper towels.
- Place the turkey on the smoker rack and smoke for about 30 minutes per pound, or until the internal temperature of the thickest part of the turkey reaches 165 degrees F (75 degrees C). This will take approximately 4-5 hours for a 12-14 pound turkey.
- Once the turkey is smoked and reaches the desired temperature, remove it from the smoker and let it rest for 20-30 minutes before carving.
