Instructions

  • In a blender or food processor, combine 1/4 cup chipotle peppers in adobo sauce, 2 tablespoons olive oil, 2 cloves minced garlic, 1 teaspoon cumin, 1 teaspoon paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 tablespoon honey, and 1 tablespoon lime juice. Blend until smooth to make the spicy chipotle marinade.
  • Place the chicken thighs in a large resealable plastic bag and pour the spicy chipotle marinade over the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 4 hours, or overnight for best results.
  • Preheat your smoker to 225°F (110°C) according to the manufacturer's instructions. Add your favorite wood chips for smoking, such as hickory or mesquite.
  • Remove the chicken from the marinade and discard the excess marinade. Place the chicken on the smoker rack and smoke for 1 hour, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
