Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup chicken broth
- 1/2 cup dry red wine
- 1/4 cup chopped fresh parsley
- Cooked pasta or rice, for serving
Instructions
- Season the chicken thighs with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Brown the chicken thighs on both sides, about 3-4 minutes per side. Transfer the chicken to the slow cooker.
- In the same skillet, add the chopped onion, sliced red and yellow bell peppers, and minced garlic. Cook for 3-4 minutes until the vegetables are slightly softened.
- Add the dried oregano, basil, thyme, and red pepper flakes to the skillet. Stir to combine with the vegetables and cook for an additional 1-2 minutes.
- Pour the vegetable mixture over the chicken in the slow cooker. Add the crushed tomatoes, chicken broth, and red wine. Stir to combine.
- Cover and cook on low for 6 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.
- Before serving, sprinkle the chopped fresh parsley over the chicken cacciatore.
