Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 cup long grain white rice
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup water
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Place the chicken thighs in the bottom of the slow cooker.
- In a medium bowl, combine the rice, diced onion, minced garlic, chicken broth, water, paprika, thyme, oregano, salt, and black pepper. Mix well.
- Pour the rice mixture over the chicken in the slow cooker, spreading it out evenly.
- Cover and cook on low for 4 hours, or until the chicken is tender and the rice is cooked through.
- Once cooked, sprinkle the chopped parsley over the chicken and rice before serving.
- Serve hot and enjoy!
