Instructions

  • In a large bowl, combine the beef stew meat, flour, salt, pepper, paprika, and dried thyme. Toss to coat the meat evenly.
  • Heat the olive oil in a large skillet over medium-high heat. Add the coated beef stew meat and brown on all sides, about 5 minutes. Transfer the meat to the slow cooker.
  • In the same skillet, add the chopped onion and minced garlic. Cook for 2-3 minutes until fragrant. Transfer the onion and garlic to the slow cooker.
  • Add the sliced carrots, diced potatoes, beef broth, red wine (if using), tomato paste, and bay leaves to the slow cooker. Stir to combine all ingredients.
  • Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are cooked through.
  • Stir in the frozen peas during the last 30 minutes of cooking.
