Instructions

  • Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove from the water and let cool.
  • Prepare a large bowl of warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place the wrapper on a clean, damp kitchen towel.
  • In the center of the wrapper, layer a small handful of vermicelli noodles, lettuce, mint, cilantro, and carrots. Top with 2 shrimp and a sprinkle of chopped peanuts.
  • Fold the sides of the wrapper over the filling, then roll it up tightly. Repeat with the remaining wrappers and filling ingredients.
  • In a small bowl, whisk together hoisin sauce, peanut butter, soy sauce, lime juice, sriracha, garlic, brown sugar, and water to make the spicy peanut dipping sauce.
