Extra Cheesy Shrimp Quesadillas

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 flour tortillas
- 2 cups of shredded Mexican cheese blend
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of sour cream
- 1/4 cup of salsa
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, chili powder, cumin, garlic powder, salt, and black pepper. Cook for 2-3 minutes until the shrimp are pink and cooked through. Remove from heat and set aside.
- Place 4 tortillas on a flat surface. Sprinkle 1/2 cup of shredded cheese on each tortilla. Divide the cooked shrimp, diced tomatoes, and cilantro evenly among the 4 tortillas. Top each with another 1/2 cup of shredded cheese and place the remaining 4 tortillas on top to form quesadillas.
- Heat a large non-stick skillet over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
- Cut the quesadillas into wedges and serve with sour cream and salsa on the side. Enjoy!
