  • 1 pound of shrimp, peeled and deveined
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • 1/4 cup of soy sauce
  • 2 tablespoons of hoisin sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • 1 head of butter lettuce, leaves separated
  • 1 avocado, sliced
  • 1/4 cup of green onions, chopped
  • 1/4 cup of cilantro, chopped
  • 1/4 cup of peanuts, chopped
  • Lime wedges, for serving

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
  • In the same skillet, add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  • Add the soy sauce, hoisin sauce, rice vinegar, and sesame oil to the skillet. Stir to combine and cook for 1-2 minutes until the sauce thickens slightly.
  • Return the cooked shrimp to the skillet and toss to coat in the sauce. Remove from heat.
  • To assemble the lettuce wraps, place a spoonful of the shrimp mixture onto a lettuce leaf. Top with avocado slices, green onions, cilantro, and chopped peanuts.
  • Squeeze a lime wedge over the filling before wrapping the lettuce around the filling.
  • Serve immediately and enjoy!
