Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of rice vinegar
- 1 teaspoon of sesame oil
- 1 head of butter lettuce, leaves separated
- 1 avocado, sliced
- 1/4 cup of green onions, chopped
- 1/4 cup of cilantro, chopped
- 1/4 cup of peanuts, chopped
- Lime wedges, for serving
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
- Add the soy sauce, hoisin sauce, rice vinegar, and sesame oil to the skillet. Stir to combine and cook for 1-2 minutes until the sauce thickens slightly.
- Return the cooked shrimp to the skillet and toss to coat in the sauce. Remove from heat.
- To assemble the lettuce wraps, place a spoonful of the shrimp mixture onto a lettuce leaf. Top with avocado slices, green onions, cilantro, and chopped peanuts.
- Squeeze a lime wedge over the filling before wrapping the lettuce around the filling.
- Serve immediately and enjoy!
